When Catherine de' Medici departed Florence for the French court in 1547, her Tuscan cooks transformed French cuisine forever, introducing everything from the dining fork to gelato, from béchamel sauce to duck à l'orange.
These recipes, from humble peasant food to refined noble delicacies, are now celebrated as masterpieces of Italian gastronomy. Despite their growing renown, finding authentic versions of these dishes remains nearly impossible outside their places of origin.
